Seville Orange Marmalade Recipe
"as featured on BBC WM Food of a Friday"

Ingredients
1.5 kg of Seville Oranges
2 Whole Lemons
3.5 litres of Water
3 kg of Granulated Sugar

Method
1. First wash the Oranges & Lemons.
2. Then Half the Oranges & Lemons,Squeeze the juice from the Oranges & Lemons into a saucepan (big enough to cook your marmalade in), keep the orange peel, but throw the lemon peel away.
3. Slice the orange peel to the thickness you would like.
4. Put the orange peel into the saucepan with the orange juice and the water and then simmer gently for 2-3 hours, until the zest is soft.
5. Add the Granuated Sugar to the Orange Juice, Water & Zest Mixture in your Saucepan, Boil rapidly for at least 5 minutes, then test for a set. (see testing for a set information below)
6. Before potting leave for 10 minutes to stand, and then stir well to mix the zest through the marmalade.
7. Then sterlised some glass jars in the oven & pour in your marmalade.

Please note that when boiling a frothy scum will come to the top of the pan, ensure you scrap this off with a spoon.

Testing for a Marmalade/Preserve/Jam Set.

I recommend putting a plate in the fridge when you start making your Marmalade, Preserve or Jam, when you have rapidly boiled what you are making, pour some of the mix onto the cold plate, & then pop back in the fridge for a couple of minutes, as this cool the mix quickly, you will soon know whether its set.

Spiced Balsamic Red Onion Gravy - Spice up your Sausage & Mash, Add a spoonful of our wonderful Spiced Balsamic & Red Onion Chutney to your gravy, this also goes well with Lamb Cutlets.

Chilli Jam Prawns - marinate prawns in
Chilli Jam (ideally overnight), fry off in a hot pan and serve on top of a chunk of Garlic Ciabatta for a fab starter.

(make sure you keep the prawns in the fridge and cook thoroughly).

Green Tomato Filo Parcels - Cheat and buy ready rolled filo pastry, cut into squares, fill with Green Tomato Chutney, Mature Cheddar Cheese & Cherry Tomatoes, fold corners into the centre and twist to create a parcel and then bake for a yummy starter, or make a Main course out of your parcel and serve with a large salad.

Red Chilli & Tomato French Bread Pizza  -Take half a baguette, cover with Red Chilli & Tomato Chutney, top with Cheese and add your favourite toppings.


Spiced Balsamic & Red Onion Goat Cheese Tarts
- Cheat and buy ready rolled Puff Pastry, cut into squares and twist the corner to make a border, fill with Spiced Balsamic & Red Onion Chutney, top with Goats cheese and bake, serve on a bed of rocket with balsamic drizzle as a Starter or with a large salad as a main course.
